Squeeky, what kind of rice wine do you mean? Do you mean the sweet Japanese one or the Chinese original Shaoshing rice wine, which is not sweet at all, but a lot stronger.

Hi, Squeeky, I think, we need no special section in the forum for excanging some cooking secrets. The original Chinese rice wine, the best one from the region Shauohin, is a special ingredience for East Asian cooking. The taste is similar to the well known "Sherry", which you can use in case of default, if you not have got rhe original rice wine. But in well stuffed Asian shops you should get it without problems. But in normal supermarkets i've never seen it in spite of their usually broad spectrum of Asian cooking ingredencies.
